Health Department requires that you must have a machine which washes at a minimum of 60 degrees celsius and rinses for at least 83 degrees celsius for a minimum of 10 seconds. Each dishwasher will have a different capacity and operation speed. Pass through vs under bench models; pass through will typically provide higher output per hour. They also provide ease of use with no bending over or heavy lifting to load and unload. The disadvantage is they require more space than under bench models.
